LFRA texture analyzer from Brookfield Engineering offers a precise method for grading quality in food texture applications. Designed for tofu and other curd products, the LFRA compresses a sample on a test table at the press of a button with a special curd probe (three sizes available) until it ruptures. Peak load appears in grams on the instrument’s easy-to-read display, eliminating guesswork and operator error. Previously, an operator would have to visually determine the curd strength at the point of rupture. The texture analyzer is suitable for butter and cheese products, sauces, dough and baked goods, gels, vegetables, meats, candies, yogurts, and puddings. A variety of probes, fittings, and accessories are available.
